This Wild Mushroom Soup is light and full of amazing health benefits! Mushrooms are rich in Vitamin D, antioxidants, B vitamins and promote healthy immune function. It is important to buy organic mushrooms, as they absorb and concentrate whatever they grow in. So healthy growing conditions are critical!
You will need:
- 6-7 cups wild mushrooms, sliced
- 2 large shallots, diced
- 3 cloves garlic, chopped
- 7 cups organic vegetable stock
- 1 cup coconut milk
- 3 tbsp grass-fed unsalted butter
- 1 tbsp fresh thyme, chopped
- 1/4 cup fresh parsley, chopped
- Himalayan Salt & Pepper to taste
In a large pot melt the butter over medium heat. Add the shallots and sauté for 3 minutes. Add the mushrooms, garlic and thyme and cooked for 5-7 minutes. Add the vegetable stock and bring to a boil. Turn down the heat to low and let simmer for 15 minutes. Stir in the coconut milk and let simmer for 5 minutes. Mix in chopped parsley and serve.
