Kale Caesar Salad goes well with any choice of protein and is great on it’s own. The dressing if full of healthy fats, making this salad super satisfying & filling, but also great for fuelling your brain and reducing inflammation.

It’s Vegan, Paleo, Gluten Free & Dairy Free.



Vegan Kale Caesar Salad


  • 2 cups kale, washed & destemmed
  • Optional: Roasted Chickpeas, 1 Tbsp Hemp Seeds
  • Dressing:
  • 1/2 cup raw walnuts, soaked for 10 minutes
  • 2 garlic cloves
  • 2 tbsp flaxseed, ground or whole
  • 2 lemons, juiced
  • 1 1/2 tbsp dijon mustard
  • 1 tbsp water
  • 1/4 tsp himalayan salt or sea salt


  • Soak walnuts for at least 10 minutes. Drain and Rinse.
  • Add walnuts and remaining dressing ingredients to a blender. Blend until smooth.
  • This will making more dressing than you need for a single serving of salad, so store in your fridge and have it for lunch tomorrow 🙂
  • In a large bowl add kale and 1-2 tbsp of dressing. Massage with hands. Let stand for 5 minutes.
  • Plate and top with your choice of add on's: roasted chickpeas, hemp seeds, lemon slice, salt & pepper etc.
