I love the quality of Vega Products, as well as their functionality. I recently bought the Vanilla Vega Protein & Greens mixture, and it’s great for baking! Not to mention it’s full of nutritious goodness. 1 scoop has 20g of protein, 30% of your daily recommended iron, 20% calcium, and 2 full servings of greens. The greens are made from alfalfa, spinach, broccoli and kale.
Here is a simple recipe for you to try with your Vega Protein & Greens that tastes heavenly and is gluten free, dairy free and good for you.
You will need:
- 2 cups gluten free oats
- 4 organic eggs
- 3/4 cup unsweetened almond milk
- 1/4 cup maple syrup
- 1 scoop Vanilla Vega Protein & Greens
- 1/4 cup dark chocolate chips (at least 70%)
Preheat oven to 400F. Blend the oats in your blender, until flour consistency. Add in eggs, almond milk, maple syrup and Vega Protein Powder. Blend again. Pour the batter into muffin tins that are greased with coconut oil. Top with chocolate chips or fold chips into the batter before you pour into the tins. Bake for 15 minutes.
Let cool completely, for at least 10 minutes in the muffin tin before you transfer to wire rack. After those 10 minutes, they taste best warm, right out of the oven 🙂 Makes a dozen muffins.
