Homemade Sun-dried Tomato Pesto is quick and easy to prepare and is a great meal prep item to have in the fridge. You can use it on zucchini pasta, salad, sandwiches or as a dip! My pesto is Dairy Free, Gluten Free, Vegan and Paleo.

Sun-dried Tomatoes are rich in Vitamin C, a powerful antioxidant that limits the damage of free radicals and boosts immune function. They also contain high levels of Vitamin A and E! Something you probably don’t know about Sun-dried Tomatoes, is their high protein content! 1 cup of Sun-dried Tomatoes has 8g of protein. Combined with the pine nuts in my pesto, this batch has 12.6g of protein (not that you would eat it all in one sitting, but it’s good to know!).

My Sun-dried Tomatoes are from Prana, a Quebec based company that makes high quality organic products. These Turkish tomatoes are sulphite and preservative free! I rehydrated them for this recipe and they filled my kitchen with such a savoury aroma. For this recipe you will need:

  • 1 cup of Organic Sun-dried Tomatoes
  • 1/4 cup fresh Organic Basil Leaves
  • 1/4 cup Pine Nuts
  • 6 tbsp Extra Virgin Organic Olive Oil
  • 1-2 cloves of Garlic

If you have dehydrated Sun-dried Tomatoes, be sure to rehydrate them first. Simply soak them in warm water for 15-20 minutes and then drain.

Combine the ingredients in a food processor or high powered blender. Store in an air tight container in the fridge. Use this pesto with pasta, salads, or sandwiches.
