One of the easiest and most satisfying things to whip up – Smashed Avocado Toast with an Egg on top.
I eat an avocado a day, they’re my favourite fruit 🙂
Full of healthy fats, 1 avocado has about 4 grams of protein!
For this toast, you will need:
- 1 piece of organic sprouted grain bread**
- 1/2 organic avocado
- 1 organic egg
- sea salt & pepper to taste
- 1/2 tbsp coconut oil
- optional: chili flakes, paprika, cayenne etc.
** I like Silver Hills Bakery, they make several different flavours of Non GMO, Sprouted Grain Bread that you can find at most grocery stores.
Melt coconut oil over medium heat in a small pan. Crack egg and lay in pan. Cook for 3-4 minutes or until desired doneness. While the egg is cooking, toast your bread and open the avocado. Scoop flesh out of the avocado and lightly mash onto toast. Top toast with egg and then salt, pepper and spices.
