Soup’s on!

This simple, classic recipe never disappoints. Vegan and full of Vitamin C, K and biotin.

It also pairs perfectly with a grilled cheese 🙂 Some Silver Hills Sprouted Grain Bread with a creamy full fat cheese, nicely melted. Now that’s a comfort meal.

Roasted Tomato Soup

Ingredients

  • 2.5 pounds fresh tomatoes (mix of roma, cherry, heirlooms etc.)
  • 1 red pepper, sliced
  • 5 cloves garlic, chopped
  • 1 yellow onion, sliced
  • 1/4 olive oil
  • 1 litre low sodium vegetable broth
  • 1 tbsp crushed red pepper flakes
  • 1 tbsp fresh basil

Instructions

  • Preheat oven to 450 degrees F.
  • Wash and core the tomatoes. Spread tomatoes, red pepper, garlic and onion over a baking sheet. Drizzle with olive oil and sprinkle with sea salt and pepper.
  • Roast for 25 minutes.
  • Transfer to a large pot. Add stock, red pepper flakes and allow to simmer for 15 minutes. Add additional salt and pepper to taste.
  • Transfer to blender, add basil and blend until smooth.
  • Garnish with fresh basil and serve.
