Roasted Butternut Squash


  • 1 butternut squash, peeled, seeded and cut into cubes
  • 2 tbsp olive oil
  • 1 tbsp dried or fresh rosemary
  • 1 clove garlic, minced
  • sea salt & pepper to taste


  • Preheat oven to 400F.
  • Peel, seed and cut butternut squash into small cubes. Toss in a large mixing bowl with olive oil, rosemary, garlic, salt and pepper to coat.
  • Bake until tender and golden, about 40-50 minutes.
