Happy Thanksgiving! Fall is the season of Pumpkin Spice.

These simple power cookies that make an easy grab & go breakfast and pair perfectly with coffee to warm up those crisp mornings.

They are gluten free, dairy free and refined sugar free!

Pumpkin Power Cookies


  • Wet Ingredients:
  • 2 eggs
  • 1/2 cup pumpkin puree
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • Dry Ingredients:
  • 2 cups gluten free rolled oats
  • 2/3 cup dried cranberries
  • 2/3 cup pumpkin seeds
  • 1/4 cup ground flaxseed
  • 1 tsp pumpkin pie spice
  • 1/2 tsp sea salt


  • Preheat oven to 350F and line a cookie sheet with parchment paper.
  • In a small pot heat honey & coconut oil over low-medium heat until melted and well combined.
  • In a large mixing bowl, combine the oats, cranberries, ground flax, pumpkin pie spice, sea salt and pumpkin seeds.
  • Then add wet ingredients: eggs, pumpkin puree, warmed coconut oil & honey and mix well.
  • Drop 1/4 cup size dollops of batter onto parchment paper and press down slightly.
  • Bake for 15-18 minutes.
  • Let cookies cool on baking sheet completely and store in an airtight container.
