Summer’s are full of bright and colourful salads. Being light in nature, they don’t leave you feeling heavy or bloated.

This is one of my favourite Summer Salads to make at home, it’s so simple and works with every type of protein! Pictured here with 2 Shrimp Skewers.


Peach Pecan Salad

Peach Pecan Salad


  • 2 cups organic arugula
  • 5 whole pecans
  • 1 tbsp goat cheese (vegan without cheese)
  • 1/2 peach
  • 1/2 avocado
  • 1 tbsp olive oil
  • 1/2 tbsp balsamic reduction
  • 1/4 fresh lemon, juiced


  • Wash arugula and thinly slice the peach and avocado.
  • Plate the arugula with pecans, sliced peach, avocado, and crumbled goat cheese.
  • Dress with olive oil, balsamic reduction and fresh lemon juice.
  • I added Shrimp to this salad. Any protein goes well! Try it with chicken, tempeh, egg, steak, or edamame beans!
