PB & Date Cookies


  • 1 cup all natural peanut butter
  • 1 cup pitted dates
  • 1 tsp pure vanilla extract
  • 1 large egg


  • Preheat the oven to 350F and line a cookie sheet with parchment paper.
  • Soak dates in warm water for 10-15 minutes and remove pits.
  • Add dates to a food processor or blender and blend until crumbles form.
  • Add peanut butter, vanilla and egg to processor and blend until a ball forms.
  • Form small balls with the batter and press with a fork to flatten.
  • Bake for 10 minutes and let cool.
