Weekends are meant for sleeping in, making breakfast, and taking time for yourself. Small, but mighty, these Paleo Pancakes have only 4 ingredients and can be topped with anything you like! The perfect way to start your Saturday or Sunday, or Monday, Tuesday, Wednesday… you get the idea.
You will need:
- 2 eggs
- 1.5 ripe organic bananas
- 1/4 tsp ground cinnamon
- 1/8 tsp baking powder
- 0.5 tbsp coconut oil
- toppings: almond butter, raspberries, blueberries, unsweetened shredded coconut, real maple syrup
Crack the eggs in a bowl and whisk well. In another bowl, lightly mash the bananas with a fork. Add the egg, the baking powder, and cinnamon to the mashed bananas. Melt coconut oil on large pan over low-medium heat. Pour about 2 tbsp mixture onto pan. Should be able to make approximately 4 pancakes in one pan. Cook for 2-3 minutes a side. Until lightly browned. Plate pancakes and layer with your choice of fruit, coconut, nut butter and/or maple syrup. This will make 1 tall serving, as the pancakes are small.
