Oatmeal Chocolate Chip Cookies

Ingredients

  • 3/4 cup gluten free rolled oats
  • 3/4 cup gluten free rolled oats blended into oat flour
  • 3/4 tsp baking soda
  • 1 tsp cinnamon
  • 1 organic egg
  • pinch sea salt
  • 3 tbsp organic brown sugar
  • 1/2 cup coconut oil
  • 1/2 cup vegan dark chocolate chips

Instructions

  • Blend 3/4 cup oats in a blender or food processor. Then combine oat flour, oats, baking soda, salt and cinnamon into a mixing bowl.
  • In a separate bowl combine the egg and brown sugar. Melt the coconut oil and let cool for a few minutes and then add to egg and brown sugar.
  • Add dry ingredients to wet ingredients, mix well. Add chocolate chips.
  • Cover and place batter in the fridge for at least 30 minutes to cool.
  • Preheat oven to 350 F.
  • Scoop batter into balls and place on parchment paper lined cookie sheet. Bake for 7-9 minutes, until bottom is lightly browned. Then remove from oven and let cool 3-5 minutes on cookie sheet and transfer to wire rack to cool completely.
