No-Bake Gingerbread Bites


  • 1 cup soaked dates (soaked for at least 3 hours or overnight)
  • 1 cup nuts (almonds, walnuts and/or cashews)
  • 1/2 cup unsweetened shredded coconut
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp sea salt
  • 1 tsp pure vanilla extract


  • Add the nuts to a food processor or blender and pulse into small pieces.
  • Add the soaked dates, and blend until a paste forms.
  • Add dates, nuts and remaining ingredients to a mixing bowl and mix until well combined.
  • Press the mixture into a parchment paper lined pan.
  • Allow to harden in the freezer for 20 minutes. Cut into small bars.
