So you’re trying to eat cleaner in 2016, maybe incorporate more protein, and you’re bored of chicken. These breakfast sausages are an easy meal prep idea that you can make a big batch of, take with you to work for breakfast or enjoy at any time of the day. I love the flavours that come through from the spices in these patties.

You will need:

  • 2 lb ground pork (good quality raised without antibiotics or hormones)
  • 2 tsp fennel seeds
  • 1/2 tsp cayenne
  • 1 tsp fresh sage, finely chopped
  • 2 tsp paprika
  • 2 tsp fresh garlic, minced
  • 1 tsp sea salt or himalayan salt
  • 1 tsp fresh ground black pepper
  • 1 tbsp coconut oil

Combine pork, garlic, fennel and all spices in a large mixing bowl. Form into small patties. Heat a large skillet over medium heat and melt coconut oil. Cook the patties through, about 3-5 minutes a side. The centre should not be pink. Remove majority of the oil from pan in between batches. Store in an air tight container in the fridge.

This made a huge batch, about 20 or so patties. You can cut the recipe in half for a smaller batch 🙂

Below, in the not so pretty picture, you can see I paired the patties with 2 sunny side up organic eggs, sweet potato and a bit of baby kale to brighten up the plate. Doesn’t look that great, but tastes delicious!
