This Green Curry Chicken with Quinoa is a gluten free, dairy free, high protein dish that is easy to make and even easier to enjoy šŸ™‚

Quinoa is a complete protein and complex carbohydrate that provides better sustained energy throughout the day and is rich in iron and magnesium. It contains all of the essential amino acids and has a low glycemic index, which makes it ideal for those with blood sugar problems.

For this recipe you will need:

  • 1.5 – 2.5 tbsp Green Curry Paste
  • 1 cup of cooked Organic Quinoa
  • 2 boneless, skinless Chick Breasts cut into bite sized pieces
  • 1 can Organic Coconut
  • Milk
  • 1 small Yellow Onion
  • 1 small Green Zucchini
  • 1 medium sized Yellow Pepper
  • 1 fresh Jalapeno Pepper
  • 1 bunch of Organic Broccoli
  • 1 tbsp Coconut Oil

Melt the coconut oil in a large skillet or frying pan over medium heat. Add the chopped onion and chicken. Saute the chicken until lightly browned. Add the coconut milk and curry paste, continue to cook for 5 minutes. Add the remaining vegetables except the zucchini, cook for another 5-8 minutes, stirring often. Finally add the zucchini last so it is not overcooked, and let it simmer for 5 minutes over low heat.

Plate the cooked quinoa and top with the Green Curry Chicken.
