I am having the best time visiting my family in Nova Scotia, and the icing on the cake is how much Seafood I get to eat. We just enjoyed this dish for dinner!
This Greek Quinoa Salad is a simple crowd pleaser that is gluten free, dairy free, vegetarian and high in healthy fats and protein. I topped mine with Grilled Garlic Shrimp, BBQ Scallop and Veggie Kabobs.
For the salad, you will need:
- 1 cup cooked Organic Quinoa
- 1/3 cup feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, chopped
- 1 avocado, cubed
- 1/4 cup red onion, diced
- 1/3 cup pitted kalamata olives, halved
- 1/4 cup Extra Virgin Olive Oil
- 3 tbsp red wine vinegar
- 1 lemon
- 1 tsp dried oregano
- Sea Salt & Pepper to Taste
Whisk together the olive oil, vinegar, juice from lemon, and oregano in a small container and set aside. In a large bowl combine the quinoa, tomatoes, cucumber, red onion, and olives. Fold in the feta cheese and slowly add dressing to your liking. Top with cubed avocado.
You can add any protein you like or just enjoy on its own!
