Crispy Sweet Potato Chips


  • 1 large sweet potato
  • 1 tbsp coconut oil
  • sea salt and pepper to taste


  • Preheat the oven to 375F.
  • Peel your sweet potato and slice as thin as possible, or use a mandolin.
  • Line a baking sheet with foil and spread the sweet potato pieces out evenly.
  • Very lightly brush the pieces with coconut oil. Be careful, because too much oil will cause them to turn out soggy.
  • Sprinkle with salt and pepper.
  • Bake for 10 minutes in the oven, then turn over and bake for another 10 minutes. Watch the chips closely to make sure they do not burn, cook longer if they still seem too soft, but continue to watch.
  • Remove and let cool completely. If you find after they cool, they are still a little too soft for your liking, store them in an air tight container overnight and bake again following the same process the next day.
  • This worked with a few of my batches to make them extra crispy!
