Energy Bites are quick to make, save tons of time during the week and are perfect for a snack to get you through the afternoon or quick fuel before a workout.

Chocolate, Coconut & Date Energy Bites (Vegan, Gluten Free, Dairy Free)

Makes 10 Balls

You will need:

  • 2 tbsp unsweetened shredded coconut
  • 4 tbsp GF Rolled Oats
  • 2 tbsp raw pumpkin seeds
  • 8 medjool dates, chopped
  • 1/2 Organic Vegan Dark Chocolate Bar (75% or higher), chopped

Process all ingredients except for chopped chocolate. Pour into a large mixing bowl and add chopped chocolate. Roll into balls and let cool in the fridge for at least 20 minutes. Store in an air tight container in the fridge.
