I have been on a bit of a baking binge lately, so last night I decided to experiment with more protein cookies. These really helped satisfy my salty and sweet cravings. Also these are paleo, gluten free and dairy free. Each one of these cookies has 9g of protein!
These would make a great healthy dessert to bring to your holiday potluck at work, or to sit at home and watch Elf with 🙂
You will need:
- 2 scoops Chocolate Protein Powder (I used Quattro: Chocolate Love)
- 1 large organic egg
- 1/2 cup organic all natural peanut butter
- 1/2 cup organic all natural almond butter
- 1 tbsp real maple syrup
- 1/2 cup dark chocolate chips or carob chips
- pinch of Himalayan salt
Preheat the oven to 350F. In a mixing bowl place all ingredients except for chocolate chips and salt. Mix until well combined. Fold in chocolate chips. Form into small, flat cookie shapes and arrange on a parchment paper lined cookie sheet. Bake for 12-15 minutes.
Remove and let cool for 10 minutes. Makes 12 cookies.
