Chocolate, Date & Flax Muffins


  • 2 cups rolled oats
  • 3 ripe bananas
  • 2 eggs
  • 1/4 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 tbsp ground flaxseed
  • 10 dates, chopped
  • 1/4 cup dark chocolate chips
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda


  • Preheat the oven to 350F.
  • Blend 1 cup of oats in the blender or food processor then add with remaining cup to a large mixing bowl.
  • Add bananas, eggs, maple syrup, vanilla extract, baking soda and baking powder to the blender. Blend until smooth and add to the mixing bowl. Mix well.
  • Fold in chocolate chips, flaxseed, and dates.
  • Line muffin pan with paper liners and pour batter in to fill each.
  • Bake for 20 mins, until toothpick comes out clear.
  • Let cool for a few minutes and then transfer to a wire rack to cool.
