These Chocolate Chia Coconut Bliss Balls debuted at the Hawkers Market in Calgary on November 29th. I was so excited to be a part of the last Hawkers Market in Calgary for 2014, it’s a great opportunity to get out in the community and meet tons of amazing people! I had the privilege to be amongst local Calgary businesses and surrounded by delicious food and drink. Thanks to those of you who were able to come out and for following up on this recipe!
These Chocolate Chia Coconut Bliss Balls are vegan, gluten free, dairy free, nut free, grain free and guilt free! Chia seeds are full of protein, antioxidants, fiber, and omega 3’s making these yummy treats beneficial as well!
- 1/2 cup of Organic Coconut Oil, melted
- 1/2 cup Pure Maple Syrup (not Aunt Jemima)
- 1 tsp Organic Vanilla Extract
- 2 ripe Organic Bananas
- 3 cups of Organic Unsweetened Shredded Coconut (I use the “Let’s Do…Organic” Brand)
- 12 tbsp Organic Cocoa or Cacao
- 2 tbsp Organic Ground Chia Seed
- pinch of Himalayan Salt or Sea Salt
Mash the bananas in a large mixing bowl until few clumps remain. Add the melted coconut oil, maple syrup, and vanilla and mix until well combined.
Next add the cocoa/cacao and mix until all of the cocoa is combined. Now add the coconut, ground chia seed, and salt. Mix again until fully combined, feel free to use your hands here 🙂
With slightly wet hands, roll the mixture into small balls and place on a cookie sheet, lined with parchment paper. Place the full cookie sheet in the freezer and allow the bliss balls to harden for about 25-30 minutes.
Store them in the refrigerator and enjoy whenever you like! This recipe yields about 35 medium sized bliss balls!
