These Chocolate Caramel Energy Balls are paleo, gluten free, and vegan. Full of nuts & seeds to provide you with a blast of energy at any time of the day!

Make a batch of nice cream and mix with energy ball pieces for a home-made blizzard or add to your smoothie bowl for breakfast. These don’t require any baking! So store in the fridge and enjoy whenever you need a pick me up.

Why I love Chia Seeds:

  • helpful in balancing blood sugar, improving digestion and weight loss

These super seeds slow down the process of converting sugars and carbohydrates from seeds into energy. This slow-burning process, in combination with the high protein content, leads to a sustained energy boost. I used Bob’s Red Mill for this recipe 🙂

Chocolate Caramel Energy Balls

Ingredients

  • 1.5 cup medjool dates, pitted
  • 1 cup raw cashews
  • 1/2 cup raw pecans
  • 1.5 tbsp Bob's Red Mill Chia Seeds
  • 1 tbsp organic unsweetened coconut
  • 1 tbsp ground flaxseed
  • 2 tbsp organic dark mini chocolate chips

Instructions

  • Soak dates in warm water for 10 minutes.
  • Process the cashews and pecans in a blender or food processor until tiny pieces remain.
  • Remove the nuts and add to a large mixing bowl.
  • Add the dates to food processor and pulse until broken up. Add dates to mixing bowl.
  • Add chia, coconut, flaxseed, and chocolate chips to date and nut mixture.
  • Use hands to massage and combine ingredients.
  • Roll into balls and place on a cookie sheet, muffin tin, or in a container.
  • Let cool in fridge for at least 30 minutes.
  • Store in an air tight container in the fridge.
