These vegan, no-bake bars are gluten free & dairy free. They’ll last in your fridge for up to a month, so they make the perfect snack to have on hand. You can add any other nuts & seeds you like! Full of protein, fibre and healthy fats, they’re the perfect fuel day and night.

This was the first time I added Crispy Rice Cereal to a granola bar recipe, but it adds a nice crunch to it! Nature’s Path makes an organic, non-gmo, and gluten free cereal made from brown rice flour that tastes even better than your traditional Rice Krispie’s.

Chewy Chocolate Goji Granola Bars


  • 1 cup nut butter (I used a peanut & almond butter combination)
  • 1/4 cup honey or maple syrup
  • 1/2 cup coconut oil
  • 2 1/2 cup rolled oats
  • 1 1/4 cup shredded unsweetened coconut
  • 1/2 cup Nature's Path Crispy Rice Cereal
  • 1 1/4 cup unsweetened shredded coconut
  • 2 tbsp hemp seeds
  • 1/4 vegan dark chocolate chips
  • 1/4 cup goji berries
  • 1/2 tsp himalayan salt
  • 1/2 tsp pure vanilla extract


  • In a small pot over medium heat, melt the nut butter, honey/maple syrup, and coconut oil. Stirring until smooth.
  • In a mixing bowl add oats, crispy rice cereal, coconut, goji berries, salt, and vanilla. Pour in melted mixture, mix well.
  • Fold in chocolate chips.
  • *If while mixing, you feel it's too wet, bulk up the combination with more oats, coconut, crispy rice cereal, and/or nuts & seeds. However, note that the mixture with firm in the freezer & fridge.
  • Pour mixture into a baking dish, lined with parchment paper. Firmly press down with spatula.
  • Let set in the freezer for 30 minutes and transfer to the fridge. Once firm, remove from pan and parchment paper, then slice into squares. Store in an air tight container in the fridge for up to a month!
