Enjoy these festive Chia Pudding Parfaits today. They’re full of protein, fibre and antioxidants. Simple to make and are great for everyone to eat! No gluten, dairy, or nuts – unless you dress them up, which I definitely encourage 🙂

Canada Day Chia Pudding

Ingredients

  • "Red" Layer
  • 1 cup unsweetened coconut or almond milk
  • 1 cup filtered water
  • 1 banana
  • 1 cup of strawberries or raspberries would work
  • 3/4 cup whole chia seeds
  • "White" Layer
  • 2 cups unsweetened coconut or almond milk
  • 3/4 cup whole chia seeds
  • + Fruit to layer and top

Instructions

  • This recipe will yield 3-4 large parfaits. Don't need that much? Just remember to make chia pudding you need 3 tbsp chia seeds to 1 cup liquid.
  • First blend the "Red" Layer ingredients together.
  • Feel free to add vanilla extract or cinnamon!
  • Pour into a bowl or container and let set in the fridge. I prefer overnight, but 30 minutes should be enough time.
  • Mix the "White" Layer ingredients in a bowl and let set.
  • Now put together your pudding with layers of fresh fruit, nuts, coconut or whatever you want.
