This muffin recipe is easy to make and you almost always have the ingredients on hand. They’re gluten free, dairy free, refined sugar free, and vegan. Super quick to make, with only 1 mixing bowl and a blender. I make these muffins all the time! This recipe makes about 9 large or a dozen medium sized muffins.

You can use this base to build your favourite muffin recipe.

Just make the base, grease your muffin tin, and layer the batter with your fruit, nuts, seeds, or chocolate chips!

Build Your Own Muffin

Ingredients

  • You will need:
  • 3 ripe Organic Bananas
  • 2 1/4 cup Gluten Free Oats
  • 1/4 cup Organic Unsweetened Applesauce
  • 1/4 cup Real Maple Syrup or Honey
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Himalayan or Sea Salt
  • 3/4 cup frozen Organic Blueberries

Instructions

  • Preheat the oven to 350F.
  • In your blender or food processor add the oats and pulse until flour consistency. Remove the oat flour from the blender and place in a mixing bowl.
  • Add the bananas, applesauce, maple syrup, baking powder, baking soda, and salt to the blender and mix until well combined. Remove the mixture and add to the oat flour. Mix with a spatula until well combined.
  • I greased my muffin tin with coconut oil and poured the mixture in. Layer with your favourite ingredients like fresh/frozen fruit, nuts, seeds, or dark chocolate.
  • Bake for 20-25 minutes, until golden brown and when pierced with a toothpick, it comes out clear. Let cool completely and store in an air tight container.
