You can be creative with this recipe and add or omit any ingredients you want! I used the base recipe from my Banana Chocolate Chip Cookies and they turned out perfect. These are great for those people that don’t have time in the morning to make a breakfast, but still want to have something nutritious on the way to work!
Have you heard of Mulberries? They are the tiny, yellow dried fruit below on the left hand side of the photo. These berries have a soft texture and a sweet taste. They are rich in iron, calcium, vitamin C, fibre and protein. They also contain Resveratrol, an anti-aging nutrient! My Mulberries are from Prana, you can find them on their online boutique.
You will need:
- 2 cups of Rolled Oats
- 1/4 cup Unsweetened Organic Almond Milk
- 1/4 cup Unsweetened Organic Applesauce
- 1 tsp True Cinnamon
- 3 ripe Organic Bananas
- 1 tbsp Chia Seeds
- 1/4 cup lightly chopped Raisins
- 2 tbsp Organic Shredded Coconut
- 2 tbsp lightly chopped Prana Mulberries
- 1/4-1/2 cup of lightly chopped Pecans
Preheat the oven to 350F. In a large mixing bowl, mash the bananas until little or no clumps remain. In a blender or food processor, lightly process the oats into smaller pieces, but not into flour consistency. Add the oats to the mixing bowl, along with the almond milk, applesauce and cinnamon. Then fold in your remaining dry ingredients (chia seeds, raisins, coconut, mulberries, and pecans). Bake for 15 minutes. Let cool completely and enjoy!
Store in an air tight container in the fridge.
