Another nutritious Smoothie Bowl for the win this morning! These super filling bowls give you the benefit of a green smoothie, by having the nutrients broken down and easier to digest and absorb, with the nuts, seeds, and additional fruit on top for further energy to power you through the day.
You can be as creative as you want with these and add anything you have on hand!
This Blueberry & Kale Smoothie Bowl is gluten free, dairy free, paleo, and vegan (minus the drizzle of honey on top). It’s full of protein, omega’s and antioxidants. Did you know that Pumpkin Seeds are one of the best sources of iron, for a small amount of plant based foods? They offer 16% of your daily needs in just 1/4 cup. They’re alkalizing and anti-inflammatory, rich in chlorophyll and fibre. There’s 5g of protein in 1 oz of pumpkin seeds! Who would have thought?? I’m a believer that everyone should incorporate more pumpkin seeds into their diet. Raw, organic pumpkin seeds that are darkly coloured are your best bet.
You will need:
- 1 cup frozen organic blueberries
- 1 large handful organic kale
- 1 organic banana
- 1.5 cups coconut milk
- toppings: 1 organic kiwi, 1 tbsp hemp seeds, 2 tbsp pumpkin seeds, 1 tbsp unsweetened shredded coconut, drizzle honey
Blend the blueberries, kale, banana and coconut milk together to make the base of your bowl. Pour into a bowl and arrange your toppings. Enjoy 🙂
