The pancakes aren’t the star of this post – it’s the Blueberry Compote on top!

You can add this to your oatmeal, pancakes, chia pudding, or spread on banana bread and toast… just put it on everything.

Blueberry Jam was always my favourite growing up, so I made this 5 ingredient compote that unlike most store-bought jams, has no preservatives and added sugars. Not to mention it’s full of antioxidants, fibre, magnesium and protein.

Blueberry Compote

Ingredients

  • 3 cups fresh blueberries (or fruit of your choice)
  • 1/2 orange, juiced
  • 1 tsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 1 tbsp chia seeds

Instructions

  • Bring blueberries, orange juice and maple syrup to a boil.
  • Once bubbling, reduce heat and use a spatula or wooden spoon to muddle and mash the fruit.
  • Pour in vanilla extract and continue to simmer over low heat for 10 minutes.
  • Remove from heat, stir in chia seeds and transfer to a clean jar to cool thoroughly.
  • Store in the fridge.
