This Blueberry-Banana Bread is moist and has a delicious hint of cinnamon. It’s gluten free, grain free, and paleo. I added blueberries to this amazing recipe I found on Civilized Caveman Cooking. It is so quick to make and turned out perfectly! Only half of the loaf is pictured here, because I couldn’t even wait to eat it once it was out of the oven.

You will need:

  • 4 ripe Organic Bananas
  • 4 Organic Eggs
  • 1/2 cup Almond Butter (or nut/seed butter of your choice)
  • 4 tbsp Grass Fed Butter, melted. Can substitute coconut oil as well.
  • 1/2 cup Coconut Flour
  • 1 cup Fresh Blueberries
  • 1/2 tbsp True Cinnamon
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Vanilla
  • pinch of sea salt

Preheat your oven to 350F. Combine the bananas and eggs in a food processor or blender, starting on a low speed and slowly increasing to mix well. Then add melted butter and nut butter, blend again. Pour mixture into a large mixing bowl. Add coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt – mix well. Then fold in blueberries. Grease a loaf pan and pour your batter in. Bake for 55-60 minutes or until a toothpick inserted comes out clean. Remove from oven and flip your bread onto a cooling rack. Let cool, slice and serve. I kept mine in an air tight container in the fridge!
