If you have a few ripe bananas lying around these Banana Chocolate Chip Muffins are easy to make and definitely a crowd pleaser. They are also gluten free, dairy free, refined sugar free, and vegan.
You will need:
- 3 ripe Organic Bananas
- 2 1/4 cup Gluten Free Oats
- 1/4 cup Organic Unsweetened Applesauce
- 1/4 cup Real Maple Syrup
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Himalayan or Sea Salt
- 1/3 cup Dark Vegan Chocolate Chips
Preheat the oven to 350F. In your blender or food processor add the oats and pulse until flour consistency. Remove the oat flour from the blender and place in a mixing bowl. Add the bananas, applesauce, maple syrup, baking powder, baking soda, and salt to the blender and mix until well combined. Remove the mixture and add to the oat flour. Mix with a spatula or your hands until well combined and then fold in the chocolate chips. I greased my muffin tin with coconut oil and poured the mixture in (made 12 muffins). You can use baking cups if you prefer. Bake for 20-25 minutes, until golden brown and when pierced with a toothpick, it comes out clear. Let cool and store in an air tight container.
