Do you have a serious sweet tooth like me? I’m always looking for healthier options to help satisfy my cravings without making me feel like crap. These moist, gluten & dairy free Chickpea Cookies, are a great source of protein and healthy fats. Chickpeas are rich in immune boosting zinc, and soluble fibre to help lower LDL (bad) cholesterol and regulate digestion. So dig in 🙂

You will need:

  • 1 1/4 cups organic Chickpeas, drained and rinsed
  • 1/2 cup and 2 tbsp organic peanut butter
  • 1/4 cup honey
  • 1 tsp baking powder
  • 1/2 cup mini dark chocolate chips

Preheat oven to 350F. Combine chickpeas and honey in a food processor or blender. Blend until smooth. Add to a large mixing bowl and combine with peanut butter and baking powder. Fold in chocolate chips. With wet hands form into small balls and place on a parchment paper lined baking sheet. Bake for 15 minutes, they will be very soft. Let cool completely. Store in an air tight container. I like to keep them in the fridge!
